Spontaneous fermentation in open vats with 3 4 punch downs per day and then gradually decreasing by hand as the fermentation progresses. After fermentation, which lasts about 15 days, it remains with the skins for another 4 5 days. Racking, pressing, and immediately after into old oak barrels where it remains for about 24 months.
