The second fermentation in the bottle does not require any disgorging, consequently the wine remains in contact with the noble lees increasing its aromatic and structural baggage. The wine can be served without shaking the bottle, decanted if you want to separate it from its yeasts present on the bottom, or shaken lightly before uncorking to appreciate all its particular nuances.
